Hachi Parmentier or Shepherd's Pie - by Betty H.

Ingredients:

- 500g minced meat
- 500g potatoes
- 2 onions
- 500g butter
- 2 eggs
- salt and pepper

Cut your onions into slices. Preheat the frying pan with 50g of butter. Once it's melted, insert your onions until they’re brown. Add your meat to the caramelized onions. Turn off the heat once the meat has browned.


During this time, cook your potatoes in boiling water until you can easily pierce them with your knife. Peel the skin off. Purée the potatoes in a blender with eggs, milk and butter. Do not wait until everything becomes soggy.

 

Once mixed, add salt and pepper. Butter your oven-proof container to ensure nothing will stick. Spread the mixture in the container. Cook in the oven for 20 to 30 min at 450F until it becomes a little brown.
